Green beans are not widely consumed in Togo. Yet it is a food that contains many useful nutrients. Easy to grow, green beans can be eaten cooked, hot or cold, as a side dish, in salads or soups, and are a source of good health.

The green bean is a vegetable that contains minerals and fiber, which contribute to the healthy functioning of the body. A 200 g serving provides 20% of the daily requirement of provitamin A, an antioxidant recognized as effective in the prevention of certain cancers, and 25% of vitamin C, good for vitality. Green beans also provide a significant amount (27%) of folic acid, particularly useful for growing subjects and pregnant women, and 5-10% of the daily requirement of vitamins B1, B2, B3 and B6, which are sometimes difficult to find in sufficient quantities in the diet. Green beans are also a source of magnesium, iron and manganese, which prevent damage caused by free radicals, protect against infection, accelerate healing and contribute to healthy blood coagulation.

The diuretic food par excellence

Rich in fiber, green beans protect against kidney failure. Fiber is an invaluable aid in the fight against kidney stones and bladder, kidney and urinary tract diseases. The potassium contained in green beans helps keep the kidneys working properly, by protecting the kidneys from oxidative stress.

The potassium contained in green beans helps keep the kidneys working properly, contributing to protein synthesis and carbohydrate metabolism, and preventing the formation of kidney stones. Green beans help eliminate waste and stimulate the immune system. The bean is an ally against constipation and heart disease, reduces the risk of colorectal cancer and regulates blood sugar levels by slightly lowering them. It is highly recommended for diabetics.

Steaming green beans preserves all their nutritional qualities. Caution : eaten raw, green beans can cause gastrointestinal upset, sometimes serious, due to the phaseolin, destroyed during cooking.
