Food
products are composed of various components. Among them, we can find nutrients,
various other natural components, as well as additives or foreign substances.
According to Martin Kokou Aziato, a Food Engineer at the Institute of
Technology and Agronomic Research (ITRA), there are different reasons why it is
important to regularly monitor and biochemically analyze the components of
foodstuffs, whether they are natural or non-nutritive.
Food contamination is also a major issue, affecting the health of one in ten people worldwide each year and harming the income of farmers, the food industry, and trade. "When we consider food, it is essentially to meet certain nutritional needs. Therefore, we must ensure the nutritional composition of these foods before consuming them," explains Martin Kokou Aziato, a Food Engineer at the Institute of Technology and Agronomic Research (ITRA).
Furthermore,
the technological processing that these foodstuffs undergo can also lead to
direct or indirect contamination. "Thus,
it is necessary to verify the hygienic or sanitary quality of the food before
consuming it. The sanitary quality of food encompasses the properties and
characteristics of a food product that ensure its safety and wholesomeness.
Controlling the authenticity of high-quality ingredients allows us to ensure
their quality and guarantee that product declarations are accurate,"
recommends Martin Kokou Aziato.
It
is possible to ascertain the nutritional value, but it is important to note
that the presence of certain hazardous chemical substances can impact consumer
health. Therefore, these should be avoided as much as possible.
"It is essential to control the nutritional
and sanitary quality of food before consuming it. The nutritional quality of a
food includes elements such as proteins, carbohydrates, minerals, and vitamins
necessary to address deficiencies or ensure the normal functioning of the body,"
explains Martin Aziato.
Given
the significant number of different controls and biochemical analyses to be
performed, it is necessary to have good expertise, appropriate and
sophisticated infrastructure, a wide range of equipment, and a broad portfolio
of methodologies to fully meet all client needs.
